salmon chinese spinach and cauliflower

Baked Salmon with Spinach and Cauliflower- easy meal for tonight.
Prep time: 10 minutes
Cooking and baking time: 10 minutes
Yields: 2 salmon (6oz)


Yields: 4 servings of spinach and cauliflower
   12 oz cauliflower, white stem removed
  (16 oz) frozen spinach, thawed and liquid squeezed off
    4 tbsp butter
    a pinch of garlic powder
   1 cup grated mozzarella cheese
   1/2 cup heavy cream
    salt and pepper


   2 pcs salmon fillets, (6 oz each)
2 tbsp olive oil
2 tbsp oyster sauce
2 tbsp low sodium soy sauce
Pre heat oven to 400 F.
Boil cauliflower for 20 minutes until soft. Strain.
Place cauliflower back to the pot, add butter, spinach, cheese and heavy cream.
Mash while cooking for 2 minutes until well combined.
Season with salt and pepper.
Meanwhile, season fish fillets with salt and pepper.
add 2 tbsp oil in a hot pan and sear salmon for 1 minute each side until brown.
Combine oyster and soy sauce in a bowl.
Brush salmon with the sauce.
Place salmon fillets in a baking pan and bake for 7 minutes.
While resting the salmon, brush salmon with more sauce.
Serve with cauliflower and spinach mixture on the side.
