Try this delicious papaya salad
Ingredients
- 2 to 3 cloves garlic
- 2 to 3 Thai chili
- 2 Tbs brown sugar
- 2 Tbs fish sauce
- ½ tsp shrimp paste
- 2 Tbs dried shrimp
- Fresh juice from 1 juicy lime (approximately 2½ Tbs)
- 8 to 10 oz shredded green papaya (approximately ½ of medium size green papaya)Option you can mixed chayote :)
- 2 oz long beans, cut into 2-inch pieces
- 4 oz cherry tomatoes, halved or regular tomatoes cut into bite sizes
- 2 Tbs roasted peanuts
Steps

1Run the papaya through the grating attachment of your food processor (or you can do it on a regular cheese grater, or julienne them). Transfer to a large bowl and stir in the cilantro and chopped peanuts.

2Prepare the dressing: mince the chili and garlic, crush the papaya seed and pink peppercorn together in a mortar and pestle and stir together with the lime, vinegar and fish sauce. Add the palm sugar and heat in the microwave for about 30 second to dissolve the sugar. Use fish sauce to salt the dressing as needed. Toss dressing with papaya and let sit for at least 15 minutes so the flavors can mesh.yummy
