Palaman

  • 1 pound plum tomatoes, coarsely chopped (3 cups)
  • 1/2 pound red and/or yellow cherry or grape tomatoes, halved ( 1 3/4 cups)
  • 1/2 cup sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon crushed red pepper
  •  

    Directions

    1. In saucepan combine tomatoes, sugar, cinnamon, and crushed red pepper. Bring to boiling, stirring often. Reduce heat; cook, uncovered, over medium-low for 35 minutes or until thickened, stirring occasionally. Remove from heat. Transfer to a bowl; cool. Serve or store covered in refrigerator up to 3 days. Makes eight 1/4-cup servings.

Feeling Accomplishment











I am very grateful to   win  Little Miss Reedsville  in our Hometown. First, I thought, "What can I accomplish as Little Miss Reedsville?"  My mother contacted one of the schools in the Philippines   because they need  a school theater.  I do not have a lot of money to donate, so my Mother helped me with a successful fundraiser.  I was able to collect and donate $310 for the roof  of the school's mini theater. It might not be a lot, but it was a big accomplishment for me.

It was exciting  to know that I shared my blessings with others.

Looking at their  pictures, it looks like fun and hard work. I like to say hard work leads to success.

Mango Float :Recipe 
1.6 slices mango 
2.1box Graham Crackers 
3.1 pack Graham crackers  crush 
4.1 can all purpose cream  
5, 1 can sweetened  condensed milk
    1. Set out all of the ingredients and materials on the table for easy access and quick assembly.
    2. Add the all-purpose cream and sweetened condensed milk into a mixing bowl. Mix it well and set aside in the refrigerator to chill the mixture.
    3. Peel the mangoes and cut 4-6 slices.
    4. Add a layer of graham crackers into the bottom of a square or rectangular container. Spread 1/4 of the cream mixture on top of the crackers, and then place a few mango slices on top. Top it off with a layer of crushed graham crackers.
    5. Repeat the layering processes until you top everything with the cream mixture on top.
    6. Garnish the top with a few mango slices or cherries for a more festive look.
    7. Cover the container and place it inside the fridge to chill overnight.
    8. Slice the float into your desired serving sizes and enjoy!

 1. 20 Oreos, crushed
    3 tbsp. butter, melted
    1/2 c. (1 stick) butter, softened to room temperature 
 
2. 1 2/3 c. creamy peanut butter
    1 1/4 c. powdered sugar
    1 tsp. kosher salt 
 
3. 1/2 tsp. pure vanilla extract
    1 1/2 c. chocolate chips
      3/4 c. heavy cream 
 
 
Ingredients:
 
  1. In a large bowl, combine Oreo's with melted butter. Stir until crumbs are uniformly moistened and press into pie dish.
  2. In a large bowl combine butter, peanut butter, powdered sugar, salt and vanilla. Using a hand mixer, whip ingredients until smooth. Spoon mixture into crust and smooth. Place in freezer while you make your ganache.
  3. Place chocolate chips in a medium heat-proof bowl. In a small sauce pan over medium heat, heat cream until cream starts to simmer. Pour over chocolate and let sit 5 minutes before whisking until smooth.
  4. Pour ganache over peanut butter and smooth. Refrigerate until set, about 1 hour. Serve.
 Easy to make  super yum  .

Papaya Empanada Dessert





1 med. papaya
1 cup palm sugar
3 cups light brown sugar
3 cups sugar
1 tbsp. vanilla extract
1 tbsp. cinnamon

DIRECTIONS:
1. Shred your papaya
2. Cook your papaya till it softens.
3. Chop and then purée papaya 1 cup at a time using your Kitchen Aid/ Ninja Blender..
4. When that’s done, put it back in a pot and start cooking your puréed papaya adding in your ingredients on a med/low heat. (I let the papaya cook for a good 25-30 minutes to get it the way I want. It’s all up to you on how you like the consistency of it). Also test taste if it needs more light brown or white sugar.
Dough INGREDIENTS:

3 cups flour
1 stick butter flavored CRISCO shortening, cut in small cubes
12 tbsp. cold water
DIRECTIONS:
In a large bowl, pour in flour and cut up butter shortening. Mix
these two ingredients together with a fork or flat spatula. Then add in your cold water, a tablespoon at a time and mix well. Form your balls.
*Assemble the pastry - Flatten dough balls, fill, fold, crimp edges, cut uneven edges off and then poke a few holes on top. Bake at 350° for 25-30 minutes or until lightly golden brown.
(Makes about 40  empanada

Pop donut

                   
  • 2 cups all-purpose flour
  • 2 teaspoons granulated sugar
  • 1/2 teaspoon fine salt
  • 2 1/2 teaspoons baking powder
  • 6 tablespoons cold unsalted butter, cubed
  • 3/4 cup  whole milk
  • Canola oil for frying
  • Granulated sugar for coating



How to cook .
 

Directions

Pour 2 inches of canola oil into a heavy bottomed pot with a deep-fry thermometer attached. Heat to 350°F.
Meanwhile, in the bowl of a food processor, combine the flour, sugar, salt, and baking powder. Add the butter and pulse several times to cut the butter into the flour until the mixture resembles coarse meal. You can also do this by hand with a pastry blender. Stir in the milk until combined.
Turn the dough out onto a floured surface and dust the dough with flour. Gently pat the dough out until it’s a 1/2-inch in thickness. Use a 2-inch round biscuit cutter to cut out circles.
Fry the doughnuts a few at a time, being careful not to overcrowd the pot. Fry until golden brown and cooked through, about 2 minutes per side, be careful not to  burn. Let drain on a paper bag (or paper towels) to soak up the excess grease.

Frying pan

INGREDIENTS:

1.5lbs beef sliced thin
olive oil
1/2lb green beans, sliced
2 celery stalks, sliced
1 large carrot, peeled and sliced
1 bell pepper, cut into chunks
1 small onion, cut into chunks
3 garlic cloves, sliced
1/2 cup soy sauce
1/4 cup sugar
2 tbsp. vinegar
1 tbsp. sesame oil
1/2 tsp black pepper
1 tbsp. cornstarch

DIRECTIONS:

1. Combine soy sauce, sugar, vinegar, sesame oil and black pepper in a bowl. Mix well. (Sauce)

2. Scoop out 1/4 cup of sauce and mix in with beef. Marinate for at least 15 minutes.

3. Whisk in cornstarch to remaining sauce.

4. Heat olive oil in a wok or large skillet on med/high heat. Add in beef and green beans. Mix and cover for about 5 minutes or until green beans start to soften. Stir a couple of times. Remove lid.

5. Add in onions, garlic, celery and carrots. Cook for a couple of minutes before adding in bell peppers and remaining sauce.

Banana Roll up









INGREDIENTS
  • 6-8 pieces ripe bananas, cut in half lengthwise, about 3"length
  • 12 - 15 strips of jack fruit
  • 12 - 15 pieces spring roll wrappers
  • 1 cup brown sugar
  • Cooking oil for frying

1 Separate the spring roll wrappers, arrange your plates in sequence : sliced banana, sugar, jackfruit.
2 Lay the wrapper, dip the banana in sugar and put on one end of the wrapper, lay a slice of jackfruit on top.
3 Fold starting at the end of the wrapper with the filling, fold the 2 sides in, then roll up to the end. Seal the end with water.
4 Heat up the oil in medium heat and fry the turon with the sealed end side down first (to keep it sealed). Cook until slightly browned and flip.
5 Fry the other side, and once slightly browned, sprinkle sugar(1 tablespoon per roll) onto the oil to caramelize and glaze the fried roll.
6 Cook until golden brown.

Homemade pudding







Homemade Vanilla Pudding
2 cups milk
1/2 cup white sugar
3 tablespoons cornstarch
1/4teaspoon salt
1 teaspoon vanilla extract
1 tablespoon butter

In medium saucepan over medium heat, heat milk until bubbles form at edges. In a bowl, combine sugar, cornstarch and salt.Pour into hot milk, a little at a time, stirring to dissolve. Continue to cook and stir until mixture thickens enough to coat the back of a metal spoon. Do not boil. Remove from heat, stir in vanilla and butter. Pour into serving dishes. Chill before serving.

Oven lecheon kawali
















    • 2 pounds boneless skin-on pork belly, cut in half
    • 8 medium cloves garlic, smashed
    • 2 bay leaves
    • 1 tablespoon black peppercorns
    • 1/2 cup soy sauce
    • Kosher salt
    • Canola or peanut oil, for frying
    • Rice or cane vinegar, preferably spicy, for dipping



    1. Place pork belly, skin side down, in a large pot and add enough water to completely submerge meat. Add garlic, bay leaves, peppercorns, and soy sauce. Bring to a boil over medium-high heat, then lower heat and reduce to a simmer. Cover and cook until pork skin can be pierced with a knife with no resistance, about 1 hour. Transfer pork to a wire rack set in a rimmed baking sheet and season liberally with salt all over. Refrigerate pork until skin has completely dried, 6 hours or overnight.

    2. Remove pork from refrigerator and cut into 3/4-inch slices.

    3. Fill a wok or Dutch oven at least 4 inches oil and heat to 375°F over high heat. Working in batches, fry pork until deeply browned and skin has bubbled and crisped, 7 to 10 minutes. Transfer pork to a paper towel-lined plate and season with salt to taste. Cut pork slices into 1/2-inch pieces. Serve immediately with vinegar for dipping.
